The most delicious way to have Kale, in my opinion. It is very light summer salad, plus it is packed with nutrition . You can mix kale with spring mix or spinach, it is going to be even better. I prefer it as it is.
- hand full of kale (with stamps removed and bite size chopped)
- half of an apple cored and thinly sliced
- red onion thinly sliced
- blue cheese crumbled( just a bit)
- low sodium blue cheese dressing
- cranberries or raisins( what ever you like more)
- pecans or walnuts pieces , or you may add pumpkin seeds
- black pepper and salt
Mix all the ingredients listed above and enjoy.
