Macaroni salad


I love that twist on the usual and boring macaronis. You can use it as a salad or side dish. It is a wonderful way to add vegetables on a plate. Also it is summer and farmers markets full of fresh and juicy ingredients.  In that recipe  I use  Whole wheat fusilli. 

You need:

  • 4 cups aldente  cooked macaronis
  • 1 1/2 cups blanched and medium chopped geen beans
  • 1 cup defrosted green peas 

For dressing :

  • chopped parsley 
  • 3 tbsp olive oile 
  • 3 tbsp lemon juice 
  • 1/2 tsp lemon peel 
  • 1/2 tsp salt
  • 1 tsp black pepper 
  • 1/2 garlic powder

I like to prepare my dressings in Maison jars. It is easy to mix and you can always put dressing leftovers in refrigerator  for later.  Mix all ingredients together and refrigerate at list for 2 hours, so  all components going to merge  nicely. I do that salad night before…
