My way paella

paella2I’d like to offer to you a very easy recipe for paella. Fast and festive dinner as little as 40 minutes in one pot.

You need:

  • 25 shrimp
  • 1/2 cup cubed white fish
  • 2 cups sliced bell peppers( i like different colors)  
  • 1 medium serrano pepper
  • 1 medium cascabel pepper (you can substitute with any medium hot seasonal peppers)
  • 1 small shallot onion finely chopped 
  • 2 cloves of garlic minced
  • 4 tbsp minced sun-dried tomatoes   
  • 1/2 cup good dry white wine
  • 2 cups blended rice mix( white, brown, wild, red)
  • 4 cups vegetable stock 
  • 2 tbsp olive oil
  • 1/8 tsp cumin powder
  • 1/2 tsp chipotle powder
  • 1/2 tsp turmeric powder
  • 1/2 tsp ground paprika 
  • 1/2 garlic powder
  • 1/2 tbsp salt
  • Italian  parsley for garnish  
  • 1/2 tbsp lemon juice  

Put iron skillet on a medium heat. Season shrimp and fish with salt, little bit of olive oil and lemon juice. Fry shrimp until almost ready (do not overcook them). Remove  shrimp  from skillet and put peppers, fry them about 5 minutes till soft, add minced hot peppers and sun-dried tomatoes.  Add onion and garlic. Wait till caramelized and add wine. Then add spices and rice. Stir and wait until rice gonna absorb all color from vegetables. Add 3 cups of vegetable stock. Stir it and put row fish on a top. Reduce from medium to low heat. Cook it about 20 minutes, do not forget to stir. After liquid absorb add another cup of stock. Cook another 10-15 minutes. Add shrimp and parsley. Cover with foil for 10 minutes. ENJOY…
